Ingredients
  1. 100g Thai-style rice noodles
  2. mixed salad leaves
  3. 1 red onion, sliced
  4. 1 cooked BBQ chicken, cold or hot
  5. 1 large mango, sliced
  6. Thai-style salad dressing
  7. mint
  8. coriander
  9. peanuts (optional)
Instructions
  1. Cook rice noodles as per directions on the packet, rinse and drain excess water.
  2. Toss, lightly together, noodles, shredded chicken pieces, onion and mango in a bowl.
  3. Lay a bed of salad leaves on a serving dish. Overlay the noodle and chicken mixture. Garnish with coriander, mint and peanuts. Drizzle Thai salad dressing. Serve hot or cold.
