Recipe Apple & Strawberry Clafoutis

It’s a little bit of comfort food from the garden. Delicious served warm or cold with pure cream (is your mouth watering yet?!), Apple & Strawberry Clafoutis is the must back winter sweet dish.

Ingredients

Serves 6-8

1 cup white sugar
1 1/2 cups peeled and diced
granny smith apple
1 1/2 cups halved strawberries
1 cup plain flour
1 tsp baking powder
4 large eggs
1 3/4 cups full cream milk
2 tsp vanilla extract
Zest of 1 lemon
Icing sugar for dusting

Method

1. Preheat oven to 220oC.
2. Butter a 25 cm flan dish or heavy baking dish.
3. Sprinkle the bottom with 2 tblsp of the sugar.
4. Spread the fruit pieces in the bottom of the dish and bake for 10 minutes.
5. In a bowl, whisk together the flour and baking powder.
6. In another bowl, using an electric mixer or wire whisk, beat the eggs with 3/4 of the sugar until well mixed, approx. 1 minute.
7. Add the flour alternating with the milk.
8. Add vanilla and lemon zest.
9. Pour batter over the fruit and sprinkle with the remaining sugar approx. 2 tblsp.
10. Bake for 30 – 35 minutes until golden and puffed.
11. Cool slightly then dust with icing sugar.
12. Serve with Pure Cream or Creme Anglaise.
