Chicken & greens stir-fry


500g chicken thigh, cubed
1 egg, whisked
3 tablespoons of rice flour
snow peas
1 red chilli, finely chopped
3 tablespoons sweet honey & soy sauce
Parsley or coriander



Coat chicken in egg and dust with rice flour.

Heat wok or frying pan on high heat with canola oil. Cook chicken until cooked through and set aside.

Add snow peas and zucchini and cook until softened. Add chilli and briefly cook until fragrant. Add chicken back into pan, add soy sauce and stir to combine.

Serve: hot with chopped parsley or coriander.
