Creamy lemon crumble squares recipes

Super yummy lemon slice for sweet treats and picnic basket food.



1 1/4 cups plain flour

1 1/4 cups traditional rolled oats

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup castor sugar

1/2 cup brown sugar, packed

3/4 cup unsalted butter, melted

1 teaspoon vanilla extract

395g tin condensed milk

2 tablespoons lemon zest

1/2 cup fresh lemon juice

2 large egg yolks



Preheat oven to 180˚C and line 20cm square baking tray with baking paper.

In a large bowl, add flour, oats, salt and baking soda. Mix in sugars, then add vanilla, butter and mix all together.

Press half the mix into the baking tray. Bake for 15 minutes. While bottom crust is baking, mix together condensed milk, lemon zest, lemon juice and egg yolks. Add to baking tray once it is finished baking. Finish by adding the remaining crumble evenly over the top.

Bake for an additional 25 minutes. Refrigerate to cool before slicing into squares.
