Fresh green beans should be celebrated al naturale. Try this lightly seasoned bean and almond side dish and celebrate spring!
Ingredients
1 tablespoon of olive oil
1/2 cup flaked almonds
2 shallots, cut on the long angle
1 tablespoon of lemon juice
1 tablespoon of grated ginger
300g dwarf beans, tipped
1 tablespoon of capers, drained
salt & pepper to season
Method
Steam beans until lightly softened and their rich green colour is retained. Set aside.
Heat oil in a frying pan. Add flaked almonds and stir constantly, so not to burn, until lightly browned.
Add shallots and ginger, stir for a mintute. Add lemon juice, beans and capers to the frying pan and stir until beans are heated through.
Season with salt and pepper.
Serve
Serve warm or cold with cooked or smoked salmon for a wonderful lunchtime meal or serve as a side to any main.
