Hawaiian Chicken & Pineapple Skewers recipe


• Chicken thighs, cubed
• Green and red capsicums
• Pineapple, cubed
• Red onion, chunks 

Chicken Marinade:
1 tbsp Ketchup
1 tbsp Soy sauce
1 tbsp Pineapple juice
2 tbsp Olive oil
1 tbsp Rice vinegar
Garlic, minced
Ginger, minced
1 tbsp Sesame oil

Stir together ketchup, soy sauce, pineapple juice, olive oil, rice vinegar, garlic, ginger and sesame oil in a mixing bowl. Whisk together. Season with salt and pepper.

Coat chicken pieces with half of the marinade in a resealable bag. Seal bag and refrigerate 1 hour.

Toss fruit and veggies with oil and season. Thread ingredients onto skewers: thread red onion, capsicum, pineapple and chicken onto skewers until all of the chicken has been used.

Place skewers on a hot BBQ plate or in a cooking pan. Cook one side for 5 minutes then brush along tops with remaining marinade. Rotate to opposite side and brush with marinade on opposite side until chicken is cooked through thoroughly.
