Pickling Garlic

A simple recipe for pickling garlic clove to store for later use.



1 cup garlic cloves, peeled, cooked
2/3 cup water
1/3 cup white, red or cider vinegar
4 tbsps castor sugar
1 1/4 tsps salt
1/4 tsps mustard seeds
pinch of chilli flakes (optional) 



In boiling water, cook garlic cloves for 3 minutes, remove from water and transfer to clean, sterilised jars or canning jars.

Combine 2/3 cup water, vinegar, sugar, salt, mustard seeds and chilli flakes in a small pan, bring to high heat and stir ingredients until all dissolved.

While hot, pour the solution into jars, seal tightly and refrigerate.

Pickled garlic can be kept fresh stored in the refrigerator for a few months. Not suitable for pantry shelf storage.
