There is nothing more charming than enjoying a glass of bubble and a cucumber sandwich, whilst in good company. A rather ‘English Tradition’, the humble cucumber sandwich is a wonderful light snack and in era of Downton Abbey, enjoyed in company during a game of cricket.
This recipe is a twist on the traditional cucumber sandwich, with the added culinary delight of a mint, chive and cream cheese spread. The mint compliments the cucumber and is delightfully refreshing to the palette.
Ingredients for Cucumber Sandwiches
1 x Lebanese cucumber
1 x loaf white bread
200g cream cheese
1/8 cup finely diced chives
1/8 cup finely diced mint
Method for making
1. Using a cookie cutter, cut white bread into small bite sizes.
2. In a bowl mix cream cheese, chives and mint together, until a consistent spread.
3. Spread the cream cheese mix onto white bread.
3. Top and tail the cucumber.
4. Using a potato peeler, thinly slice the cucumber.
5. Place the cucumber ontop of the bread slice with the cream cheese. Have the ends of the cucumber joining in the middle for lovely sandwich presentation.
Tips for High Tea preparation
Bread can be pre-cut weeks in advance and frozen in an airtight container.
Cream Cheese spread can be prepared four (4) days before required use.
