Recipe Lamb Kofta’s with Fresh Herbs

Use your abundance of fresh herbs (such as parsley, coriander and mint) in this delicious recipe. This is a great meal for ‘Little Gardeners‘, particularly if they are involved in harvesting the ingredients.

Ingredients

500gram Lamb Mince
1/4 cup Bread crumbs
1 TBS Tomato paste
1 TSP Cinnamon powder
1 TSP Cumin powder
1 TSP Coriander powder
2 cloves crushed Garlic
1 Egg
3/4 cup mixed fresh Herbs (parsley, thyme, coriander, mint, oregano)
Pepper
1 chopped Chilli (or chilli powder, opt for less if you are catering for ‘Little Gardeners’)
1/2 a Lemon zest

 

Method

1. Mix all ingredients together, cover and place in the fridge for 30-60minutes
2. Roll ingredients into cylinders (or into flat balls)
3. Fry until brown

 

Great ways to use

1. Serve on rice, cous cous or as in a salad wrap!

2. Make extra and freeze portions for later use (separate layers by using cling wrap), is a great last minute meal.
