Savoury Zucchini Slice is an easy dish to make and the ideal choice for using that surplus zucchini produce and meat leftovers. Best of all Savoury Zucchini Slice can be frozen, making for a great lunch box snack. Bake in mini muffin trays for a bite size savoury High Tea treat!
Ingredients:
3 medium zucchinis, grated
1 large onion, chopped
200g rindless bacon*, chopped
1 cup grated cheddar cheese
5 eggs
1 cup self-raising flour, sifted
1/4 cup olive oil
2 tablespoons Worchestershire sauce
Method:
Preheat oven to 170˚C. Grease and line a 30 x 20cm lamington pan.
Beat eggs in a large bowl. Add flour and beat until smooth. Add oil and Worchestershire sauce. Add zucchini, onion, bacon and cheese, stir until well combined. Pour into prepared pan. Bake until a knife or skewer comes out clean (approx. 30–45 minutes. If cooking in mini muffin tray only 12-15 minutes is required).
*leftover chicken, sausages or canned salmon or tuna can be substituted.
This dish freezes well.
