Recipe Fresh Tomato Bruschetta

Warm weather is a time for Sunday Arvo BBQ’s and get-togethers. It’s also a time when you may find yourself in the position of having an abundance of tomatoes in the garden. So why not entertain your guests with this refreshing, fresh and delicious entree dish.

Ingredients
  1. 1 x Cup fresh Cherry tomatoes
  2. 4 x Sprigs fresh chives
  3. 2 x Bocconcini
  4. 4 x Slices (approx 1.5cm thick) Crusty Bread (why not make your own!)
  5. Olive Oil
  6. Balsamic Vinegar
Instructions
  1. 1. Pip the cherry tomatoes (cut in half and using teaspoon scoop out seeds). Cut flesh into small cubes.
  2. 2. Dice chives into small flakes
  3. 3. Slice Bocconcini into slices
  4. 4. OPTIONAL: Toast bread under grill for 2-5 minutes at 180 degrees (don't leave to dry out, still needs to be soft in middle)
  5. 5. Gentle mix chives & tomato together
  6. 6. Place sliced Bocconcini on toast, then top with tomato & chives. Finish with a sprinkle of Olive Oil & balsamic Vinegar to taste.
  7. For extra flavour add fresh basil to the mix!
