INGREDIENTS
1kg chicken thighs
125g whole cherry tomatoes
zucchinis, cut into wedges
100g mushrooms, sliced
Dutch carrots, whole
eshallots, chopped finely
Tuscan spice seasoning
olive oil
rosemary to garnish
Method
Line tray with baking paper. Place the chicken thighs at the bottom. Scatter creatively tomatoes, zucchinis, mushrooms, carrots over the chicken. Sprinkle over chicken and vegetables generous amounts of Tuscan seasoning and olive oil. Garnish with rosemary.
Bake
Bake in the oven at 200˚C for 30-40mins until chicken is cooked and vegetables start to crisp up.
