Vegetable couscous salad


Quick, healthy vegan salad to grill up in minutes. 


1 cup couscous
grilled vegetables of your choice such as squash or zucchini
cherry tomatoes
lemon, wedges


Grill vegetables and tomatoes with a drizzle of olive oil. Prepare couscous as per directions on the packet. Combine couscous and vegetables together in a bowl. Season with salt, pepper, lemon, shallots and garnish with coriander.

Serve hot with an extra drizzle of olive oil.
