Recipe Vietnamese Mango Chicken


2 tablespoons fish sauce
1 teaspoon brown sugar
1 teaspoon lime sauce
1/4 teaspoon pepper
4 tablespoons oil
500g boneless chicken breast, cubed
1 medium chilli, finely diced
2 teaspoons minced garlic
200g peas or snow peas, halved
1 tomato, diced
1/2 cup cashew nuts
1 large ripe mango, sliced


Handful of coriander for garnish
Dissolve sugar with fish sauce, lime juice and pepper in a small bowl.
Brown chicken in oil in a saucepan then remove chicken to sit. With the oil left in the pan cook chilli and garlic for a few seconds then add the snow peas and cook for a further minute. Add chicken, fish sauce mixture, tomato and cashews and stir for one minute. Add mango slices and coriander when serving with white rice or on it’s own.
